Baby Don't Be Blue Pie

"Baby don't be blue. Gonna make for you. Gonna make a pie with a heart in the middle."
These are some of the lyrics to a song in Waitress, and I thought it was only appropriate to make a blueberry pie to go with them. This makes a good comfort pie after a hard day or a rough spell. We all need a pick me up sometimes and a little encouragement. This pie can simply help us kiss the "blues" good-bye and serve as a reminder that there is a heart behind every pie!

4 c. blueberries, fresh or frozen
3/4 c. sugar (or a little more if you desire)
3 Tbsp. corn starch
1/2 tsp. nutmeg
1/2 tsp. lemon zest
1 Tbsp. of butter or margarine

1. Preheat oven to 400F.

2. Make Easy Peasy Pie Crusts. Pressing one into the pie pan.

3. In a mixing bowl, combine blueberries, sugar, corn starch, nutmeg, and lemon zest.
4. Pour blueberry mixture into waiting pie crust.

5. Dot with butter or margarine.

6. Cover with top crust. Crimp edges and cut vents in the top crust. Dust the top of the crust with a little sugar.
7. Bake pie in preheated oven for about 45 minutes, or until crust is golden.

The Verdict
I did not actually try this pie, but it looked and smelled delicious. It was also pretty easy to toss together, which is good because it then allows you to enjoy the company of the ones for whom you make the pie!
