Family Near and Far Pie

A couple of weeks ago we had a big family reunion at our Grandpa's house. We had family there from all over the world! So, naturally, Reagan and I had to make pies to contribute to the carry-in meal. Thus, Family Near and Far pie was born!

1-8oz. package of cream cheese
1/2 c. sugar
2 eggs
2/3 tsp. vanilla
2 c. mixed berries
1/2 c. sugar
2 tsp. corn starch

1. Preheat oven to 375F.

3. In a mixing bowl, beat cream cheese and 1/2 c. sugar.
4. Add eggs and vanilla. Mix well.
5. Pour into waiting crust. Bake twenty minutes or until center is set.
6. Cool.
7. In a saucepan, combine berries, 1/2 c. sugar, and corn starch.

8. Cook on medium heat, stirring constantly until thick.
9. Cool, and then put atop waiting cheesecake.

10. Refrigerate until ready to serve.

The Verdict
The pie turned out great, and it was quickly devoured by our family. It was fairly easy to put together. It was very similar to Dining-In Dessert Pie, just with a different topping. Also, we used frozen berries, but you may have to adjust the recipe a little bit for the topping depending on the berries. You may have to add some water to the mixture if there is not enough juice from the berries. You kind of have to play it by ear (sorry for you folks that need exact directions, we rarely use those in my kitchen!).
