Food Sale Pie

So, in recent months my dad has discovered a unique and wonderful thing. The food sale. It is held in a pole barn the first Friday of each month in a town about 30 minutes from our house. At this sale, they sell all kinds of things. In some ways it is like an auction in that you can bid on items; however, the man who runs the sale will interrupt the bidding if he thinks it is too high for a particular item. Some of the things are sold in bulk or in cases while others are sold individually. There is everything from cereal to frozen french fries to peanut butter to 5-lb. bags of whipping cream!!!! Anyway, Dad enjoys going each month to see what kind of deals he can get, and last month he came home with a gallon can of apricots...for pie. So, here it is! The long-awaited food sale apricot pie!

3 c. apricots, drained
3 Tbsp. flour (I made them heaping Tbsp.)
3/4 c. brown sugar
1/2 tsp. nutmeg
1/2 c. brown sugar
1/4 c. flour
1/2 c. oats
1/2 tsp. nutmeg
3 Tbsp. butter/margarine, softened

1. Preheat oven to 400F.

3. In a bowl, combine apricots, 3/4 c. brown sugar, 3 Tbsp. flour, and 1/2 tsp. nutmeg.
4. Pour into waiting pie crust.

5. In a separate bowl, combine 1/2 c. brown sugar, 1/4 c. flour, 1/2 c. oats, 1/2 tsp. nutmeg, and 3 Tbsp. butter/margarine.
6. Spread evenly over apricot mixture.
7. Bake at 400F for about 50 minutes.

The Verdict
Well, I did not actually eat this pie, and I have not heard how it was from the consumers yet. However, the pie looked really good (even though it ran over pretty badly as you can see in the picture!). It also smelled really good. I think I may have used a few too many apricots, which is why it ran over so badly, so I may suggest scaling back the apricots a bit. I am guessing that it would be quite similar to a peach pie. So, if you come across a food sale where you can pick up a cheap gallon can of peaches (or you go to your local grocery), you should try this super easy pie!
