A Houseful Pie

Last weekend we had a wonderful houseful of people! Our wonderful friends (Derek and Karen) and their 3 boys stayed with us for the long 4th of July weekend. We had a great time, which of course, included eating lots of good food including this pie. YUM!


1 Graham Goodness Pie Crust
1 cup fresh strawberries, cut into chunks
1/4 cup sugar
1 package cream cheese, softened
1/3 cup sweetened condensed milk
2 eggs
1 tsp vanilla
1/2 cup chocolate chips, melted

1. Make your Graham Goodness pie crust. Set aside.

2. In a bowl combine strawberries with the 1/4 cup sugar. Set aside.

3. Using an electric mixer, beat the cream cheese with the condensed milk until creamy. Add vanilla and eggs.

4. Divide the mixture in half. Add the melted chocolate to one half. Combine.

5. Add the sugar and strawberries to the other half. Combine.

6. Pour chocolate batter into your waiting pie crust.

7. Spoon strawberry batter over the chocolate filling.

8. Bake at 350 degrees for 55 minutes.

9. Remove and cool for 30 minutes. Cover and refrigerate at least 4 hours of overnight.

The Verdict:

Has anyone ever had a bad cheesecake? Anyone? Me neither. This was good stuff! Chocolate, strawberries, and cheesecake are 3 of my very favorite things, so naturally I really enjoyed this pie. I think next time I would use 1/2 cup of the sweetened condensed milk (instead of only 1/3). The consistency of the cheesecake was a little bit tasted great though.

Our friends enjoyed it too, although Karen said she would leave out the chocolate layer if she were to make it again (but she's not a huge chocolate fan). It would be good that way. I am generally not a fan of cooked strawberries in pie (I prefer recipes with fresh uncooked berries), but the berries in this pie were awesome even cooked!

This was very good pie!
