Pucker Up Pie

You would think by the title of this pie that it has some sort of story behind it, but no. I just thought it would be a cute name since gooseberries are so tart, and just eating them will likely make your face pucker a bit. So, prepare to pucker up and enjoy this pie!

3 c. gooseberries
1-1/2 c. sugar
3 Tbsp. tapioca
1/4 tsp. salt
Tbsp. of butter

1. Preheat oven to 400F.

3. Crush 1/2 c. of gooseberries. Mix with sugar, tapioca, and salt.

4. Cook and stir until bubbly. Cook for an additional couple minutes.

5. Add remaining whole berries.
6. Cook until thick and bubbly.
7. Pour into prepared pie crust. Dot with butter.
8. Adjust top crust, seal, and cut slits to vent.
9. Bake at 400F for 35-45 minutes, or until crust is golden.

The Verdict
I did not actually get the opportunity to try this pie, but it looked quite delicious. Because you cook the filling in advance, there is a bit more time and effort involved in this pie than in most fruit pies. However, I do think that it is best to pre-cook the filling. It definitely allows you to ensure that the pie will thicken up and not be runny.
