Happy New Year Pie

Happy New Year from all of us here at Pie Inspired!

We had a great Christmas vacation visiting with our family! While visiting my parents, I could tell the they missed having Heather around to make them pies! The day we arrived, my Mom slyly hinted about having a half pint of heavy whipping cream that she needed to use up, so we should make a pie! :-)

We decided to create a new spin on a family favorite, so instead of using black raspberries, we used frozen strawberries.


1 Easy Peasy Pie Crust
1 2 1/2 cups of thawed frozen strawberries (or fresh if you have them, but slice them up a bit)
1 cup heavy whipping cream (you could also use half and half, if you want to save some calories)
3/4 cup sugar
4 Tbls flour


1. Make your easy peasy pie crust. Place it in your pie pan and set it aside.

2. Preheat oven to 400 degrees.

3. In a mixing bowl, blend sugar and flour.

4. Add berries and coat well.

5. Add cream and mix well.

6. Rub a bit of flour on the bottom of your pie crust, and then pour berry mixture into your crust.

7. Bake in 400 degree oven for about 10 minutes. Then turn it down to 350 degrees and bake an additional 35-40 minutes. Mine went an additional 10 minutes because it looked pretty runny. It was still runny when I took it out, but it solidified upon cooling.

The Verdict:

This isn't beautiful pie. If you are going for show, it simply wasn't pretty. However, it tasted WONDERFUL!! I am usually not a huge fan of cooked strawberries (I prefer strawberry pies that use fresh berries), but this was wonderful! We topped ours with cool whip and it was delicious! This recipe is great because it is so versatile. You could probably use just about any fruit and it will turn out great. Heather used peaches once and it was great too!
